Roasted winter vegetables

4 c winter vegetable, such as broccoli, cauliflower, or brussel sprouts
1/4 c olive oil
1 T thyme
1 T minced garlic
2 t sea salt
1 t black pepper

Place vegetables in medium bowl.  Top with oil.  Toss with remaining ingredients to coat.  Place on cookie sheet.  Bake at 425 for 30 min.
